A Konkan coast twist on a gin fizz. Deep pink and tangy.

- 50 mlGin
- 30 mlKokum syrup
- 15 mlLime juiceSqueeze it fresh. Bottled juice tastes flat. 1 lime gives about 25 ml.
- 1 pinchBlack salt (optional)
- Top upSoda water
Plus ice.

No bar kit? A jar with a lid works as a shaker, and 1 tablespoon is 15 ml.
How to make a Kokum Gin Fizz
- Fill the glass with ice.
- Add the gin, kokum syrup, lime juice and black salt and stir.
- Top with soda.
